* Clover Honey *

CLOVER HONEY

This is a gr8 activity to do with your family!!! It's called clover honey and you don't have to be a BEE to make it! One of the best things about this activity is that it doesn't matter if you live in the city or the country almost everyone has clovers growing somewhere around their house!

Here is what you will need:

TOOLS:

1 cup measuring cup
1 tsp measuring spoon
Strainer (with small mesh wire) or cheese cloth
Medium size sauce pan
Scissors

(8) 8oz canning jars

INGREDIENTS
:

45 purple clovers
45 white clovers
20 wild rose petals
10 cups sugar
2 cups water
1 tsp alum (optional)

Here's what you do:


Step 1: Pick the clovers and rose petals


Step 2: With scissors make sure to cut off any stems or green bits (these will make your honey taste bitter).




Step 3: Using a strainer rinse your petals well (no one likes ants in their honey).











Step 4: Add all ingredients to the sauce pan on med/high heat and stir.















Step 5: Once the mixture boils time exactly 3 minutes and then remove from heat


Step 6: Set the strainer in the top of a clean sauce pan and pour mixture in - this should catch most of the petals. (If there are a few left you should try to get them out as best as you can, any debris will breed bacteria)






Step 7: Pour honey into jars and with a warm damp cloth wipe any dribbles before you put the covers on. If the honey is nice and hot then you should hear the 'POP' as the lids seal.










Step 8: Have fun naming and handing out (AND TASTING) your honey!!
